"How can one possibly assume that a Catholic doesn't know Jesus' salvation?" It is not a case of "possibly assuming" but of "certainly knowing."
One knows for certain that each and every Roman Catholic is unsaved for the following reasons: 1. Roman Catholicism is very dark. There are so many practical and theological errors that anyone with eyes will see that it is not of God, but Satan. 2. If and when God saves a Roman Catholic, that person will reject the Roman Catholic Church and leave it presently. He will seek out a Church that obeys and honours God i.e. a Bible-believing Protestant church. As it is written in Revelation 18:4, "Come out of her, my people, that ye be not partakers of her sins, and that ye receive not of her plagues," she being the abominable Roman Catholic Church. Not every Protestant church is a living church; most in this day of little faith are not. However it is safe to say that though few Protestant churches are alive, the Roman Catholic Church is certainly dead. Roman Catholics mistake age, number of adherents (or size), complexity of structure, profundity of ritual, visual appeal, and material wealth for truth and the blessings of God. Major mistake indeed! God has never been impressed with physical attributes, unlike man. Otherwise, like man, He would have chosen well-built Saul to be king. And the Pharisees, being well-organised, exact and numerous, would have constituted the true religion rather than Jesus and His motley crew. "Gain is not godliness, but godliness with contentment is great gain" (1 Tim. 6:5,6).
